One Coorg-Style Masala, Five Weeknight Dinners

A versatile masala earns its place in the cupboard when it solves different dinner problems without making every meal identical. The trick is to change the cooking base, texture and finishing ingredients—not merely the main vegetable or meat.

1. Quick mushroom pepper fry

Sauté sliced onion until lightly browned. Add ginger, mushroom and salt, then cook until excess moisture evaporates. Add a small amount of Coorg-style masala and freshly cracked black pepper on low heat. Finish with coriander or curry leaves. This is a dry preparation, so use less powder than you would in a gravy.

2. Coconut vegetable curry

4. Simple chicken curry

Brown onions, then cook ginger, garlic and tomato. Add the masala over low heat, followed by chicken and enough water for the desired gravy. Simmer until the chicken is fully cooked. Taste for salt and acidity only after cooking, because the gravy will concentrate.

5. Roasted potato or cauliflower

Mix parboiled vegetables with oil, salt and a modest quantity of masala. Roast until browned, turning once or twice. Ground spices can burn, so avoid excessive masala on the surface and use moderate heat. Finish with lemon after roasting.

Why these dishes do not taste the same

The mushroom fry is dry and pepper-forward. The vegetable curry uses coconut and acidity. The paneer dish is tomato-led and mild. Chicken develops savoury depth during simmering. Roasted vegetables gain browned flavour. The masala is a supporting thread rather than the entire identity of each meal.

A practical quantity guide

Begin with one teaspoon for a small dry dish and one to two teaspoons for a gravy serving three to four people. Always check whether the pack contains salt. Spice strength varies, so tasting is more reliable than copying a fixed spoon count.

Make weeknight cooking faster

Prepare chopped onions and ginger-garlic in advance, store them safely under refrigeration and cook only what you need. Keep the masala dry and airtight. Do not use a wet spoon or shake it over steam.

A ready blend is most useful when it shortens preparation without ending experimentation. Change the base, cooking method and finish, and one packet can support several genuinely different dinners.
