White pepper provides pepper heat with a different aroma and a lighter visual appearance than black pepper, useful in pale sauces and selected Asian dishes.
What it tastes like
Earthy, warm and direct, with a characteristic fermented note and less of black pepper’s citrusy surface aroma.
Use it for
- Season white sauces, soups and mashed potato
- Use in fried rice, noodles and selected marinades
- Grind into spice blends where dark specks are not wanted
Before you begin
Add carefully and taste as you go; white pepper can seem stronger in aroma than expected. Grind shortly before use for a cleaner finish.
Freshness
Keep whole peppercorns dry and airtight. Grind small quantities because ground pepper loses aroma faster and can absorb kitchen odours.
