Why it belongs in the pantry
Bay leaf is a slow-release aromatic used to give gravies, rice and stocks a deeper background flavour without making them hot.
What to expect
Woody, herbal and gently floral; the character develops during simmering rather than at first contact.
Good uses
- Add one leaf to biryani, pulao or jeera rice
- Simmer in curries, soups, stocks and stews
- Use in whole-spice tempering with cinnamon, cloves or cardamom
How to get the best result
Add early and allow time to infuse. Remove the leaf before serving because it remains firm and is not meant to be eaten whole.
Keeping it fresh
Store away from moisture and direct sunlight. Rub a leaf gently—an aromatic release is a useful freshness check.
