Getting the best from it
Low heat is essential. Fenugreek darkens quickly and becomes sharply bitter if burnt, so remove it from the pan as soon as it turns aromatic.
Storage
Keep whole seeds airtight and dry. Grind in small batches because the powdered spice has a strong aroma and loses freshness sooner.
